Raw Brussels Sprout & Pear Salad

Raw Brussels Sprout & Pear Salad

INGREDIENTS: (Serves 4-6)

FOR THE SALAD:

  • 2 bags of organic Brussels Sprouts (I purchase mine from Trader Joe’s, if yours don’t come bagged, grab 3-4 big handfuls of sprouts!)

  • 2 organic pears, cubed

  • 1/2 cup shelled pistachios

  • 1/2 cup raisins

  • 2 tablespoons hemp hearts (optional)

  • 1/4 cup soft goat cheese (optional)

FOR THE DRESSING:

  • 2T Olive oil

  • Zest of 1 lemon

  • 2T Lemon juice (about 2 lemons)

  • 1 teaspoon honey

  • 1/2 teaspoon onion powder

  • Salt & pepper to taste

PREPARATION:

  1. Cut the “butts” off the brussels sprouts, and wash them thoroughly. I like to wash mine using a salad spinner, to remove as much water as possible.

  2. Rinse and cut pears into large cubes.

  3. Using a food processor, shred Brussels sprouts into small pieces. You’re also welcome to use a mandolin for this step as well, but I find a food processor to be much easier! Process them until your desired size is achieved!

  4. Once the brussels are chopped, assemble the remaining ingredients into a large salad bowl.

  5. For the dressing: combine all ingredients and whisk vigorously, making sure the oil is well incorporated. Drizzle on salad if serving immediately, or save for serving.
