Peanut Butter Energy Snack Bites (Low Sugar, Fiber-Rich)

I realized the other day that it has been awhile since I posted any snack bites! I used to be obsessed with making little energy balls, but for whatever reason they fell off my radar. I had a hankering the other day and whipped these up with ingredients already in my pantry. They turned out so well! I always crave peanut butter so need to make a habit of having these ready to go in our fridge! So delicious, and only contain 2-3 tablespoons of maple syrup in the whole batch! Such a great low sugar option, and the addition of oat bran and chia seeds gives a good fiber boost! I definitely recommend making these with the oat bran (the outer layer of the oat groat, which is super high in soluble fiber), but if you only have rolled oats on hand that works fine too! I hope you find them as delicious as I do!

Ingredients

  • 1/2 cup organic peanut butter (I like this one)

  • 1/2 cup Oat Bran (I use this brand, or sub organic rolled oats)

  • 1/2 cup unsweetened shredded coconut

  • 1/4 cup pumpkin seeds (or use any nuts you have on hand)

  • 1/4 cup coconut oil (I use refined, so it doesn’t give a coconut flavor)

  • 3 tablespoons chia seeds

  • 2-3 tablespoons maple syrup (depending on how sweet you like them!)

  • 1 teaspoon vanilla extract

  • Pinch of salt (if you peanut butter is unsalted, if salted omit)

  • 1/4 cup coconut flour (Optional, for rolling the balls in afterwards)

Preparation: (Makes 10-12 balls)

  1. This recipe is too easy! Simply combine all ingredients into a food processor and blend until dough-like consistency has formed. It may seem a little greasy, but that is OK since these are stored in the fridge and the coconut oil will firm up once cold.

  2. Form into 1/2-1 inch balls.

  3. Roll balls in coconut flour (optional).

  4. Store in fridge in an air-tight container for 1 week.
