Coconutty Collagen Squares

These have become one of my favorite high-fat snacks, and they are truly incredible. I have been tweaking this recipe for a bit, and think I have finally nailed it. I am OBSESSED with these, they are so delicious. I mean, crave them all day, melt in your mouth, perfect combo of fatty and protein-rich good (does that make sense?). Plus, they are SO simple to make. Simply throw all of the ingredients into a food processor and mix. No baking required! I enjoy these in the morning alongside my coffee and some fruit, or in the afternoon, once the dreaded 3pm slump hits. And, they are completely customizable! If you aren't a fan of one of the nuts in the recipe, swap them out for your favorite. As always, please share if you make and enjoy these squares! I don't think you'll be disappointed!!

Ingredients: 

  • 1/2 C melted coconut butter 
  • 1/2 C almond or coconut flour ( coconut flour squares will be slightly more firm)
  • 2 tbsp melted coconut oil 
  • 1 scoop collagen peptides. (I use Further Food Collagen Peptides)
  • 1/2 C raw almonds
  • 1/4 C raw pecans
  • 1/4 C raw cashews
  • 1/4 tsp vanilla or vanilla bean powder
  • 1/4 tsp cinnamon
  • 1 pinch sea salt or Maldon salt 
  • 1 tbsp raw honey or maple syrup (optional...I don't add it. If I want extra sweetness I just add more coconut butter or raw shredded coconut)

Prep:

Easy! Add all ingredients to a food processor and blend until a doughy ball starts to form. You do not want to over process, or the mixture will become too soft. Also, if you want your squares to have a bit more texture, feel free to add 1/2 of the almonds halfway through the process. Remove from food processor with spatula and place into parchment-lined loaf pan. Flatten with your hand (I cover mine in plastic wrap to prevent sticking), or a spatula. Squares should be about 1inch thick. Place in freezer for an hour. Remove from freezer and cut into bars or squares! No need to bake! Enjoy!
