Creamy Banana Bread Oatmeal (Gluten-Free)

GUYS! I am obsessed with this oatmeal. I’ve actually been making my oatmeal this way for YEARS, but now that its cold (AF) I’ve been eating this for breakfast several days a week. Plus, it is seriously easy to make! I asked on stories if you wanted me to share the recipe, and the majority of you said yes, so here you go!

Ingredients (Serves 1):

  • 1/2 cup gluten free rolled oats (I buy mine at Trader Joe’s)

  • 1/2 frozen banana (FROZEN IS KEY!)

  • 1/2 cup non-dairy milk

  • 1/4 cup filtered water

  • 2 tablespoons chia seeds

  • 1 tablespoon ground flaxseed

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Optional: peanut butter, collagen peptides, maple syrup

Preparation:

  1. Combine all ingredients (including the frozen banana) in a sauce pot and bring to a boil. Make sure to stir and scrape down the sides (chia seeds have a tendency to stick to the sides of bowls/pots).

  2. Once oats have come to a boil, reduce heat and stir occasionally. The longer they sit on the heat, the thicker the oats will become. I like my oats to be on the thicker side, but if they get too thick for your liking add a little more non-dairy milk.

  3. Top with peanut butter, more banana or any fruit! Enjoy!
