As many of you know, I do not eat beef or pork. And while I have been trying to go vegetarian for quite awhile now, my body still enjoys eating meat on occasion. I'd say I probably eat meat (chicken, turkey, fish) twice a week MAX. Some weeks I don't eat any at all. Pretty much depends on what we have in the fridge, and what my body is in the mood for. However, I must argue that during the warmer months of spring and summer, there is NOTHING quite like a backyard BBQ. Of course, I don't want to be the only one not getting in on the grilling fun, so I developed this turkey burger recipe for times like those. Plus, they are boyfriend approved, which is ALWAYS a plus! 

Ingredients:

  • 1 lb ground turkey meat (always check your labels, I look for meat that is organic and raised without hormones/antibiotics. This is SO important to me when purchasing meat since I do it so infrequently.)
  • 1/2 white onion (grated)
  • 1 bell pepper (diced)
  • 1 large egg (organic, free range, vegetarian-fed if possible)
  • 1/4 c breadcrumbs (I like Italian breadcrumbs or Panko)
  • 1/2 tsp cumin
  • 1/4 tsp cayenne 
  • 1/4 tsp paprika 
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley

Prep:

Chop/grate the onions finely (the smaller the better), and dice your bell pepper (remove seeds). Place all ingredients in a large mixing bowl, and incorporate using your [clean] hands. After ingredients are well-incorporated, form the meat into patties. Doing this is easiest with slightly wet hands. Cook on the grill for 10-15 minutes (5-7 minutes on one side to develop grill marks, and flip to finish cooking). You could also cook these on the stove or in the oven, but cook time may vary.

Serve on a bun (or by itself) with sides like carrot fries or roasted/grilled asparagus.
