Vegetarian White Bean & Lentil Side
Last week I shared this super quick and easy recipe on my stories as well as in a post and you all seemed to love it! Several of you have made it already which makes me so happy! I can’t emphasize enough how EASY this dish is. Honestly, it would be a perfect main course on their own, but people have been topping theirs with chicken sausage and parmesan, which sounds incredible. This is definitely something you can make ahead of time and save, as it gets more delicious after it sits in the fridge for a day (in my opinon…just like soup!). 2 15oz cans organic white beans
1 can tomato sauce of choice
2 cloves garlic
1 cup chicken stock
1/2 cup red lentils
1 tablespoon olive oil
1/2tsp dried oregano, parsley and basil
Salt & pepper to taste
-In a pot, add garlic, 1tbsp EVOO, and herbs. Heat until fragrant
-Add chicken stock and lentils. Cook until almost all of the stock is absorbed. Lentils may be a bit al dente, but they’ll absorb some of the tomato sauce.
-Drain and rinse white beans, and add them to the pot -Add tomato sauce -Salt and pepper to taste
-Stirring occasionally, allow beans and lentils to simmer for 20-30 mins. Remove from heat if not serving immediately.
