Savory Egg & Cauliflower Waffles
I whipped these up for Yale, since he’s always looking for quick and easy breakfast options for work. I must say, I’m pretty pleased with how these turned out! I used my Vitamix to blend all the ingredients together, and cooked them for 5 minutes in a waffle iron! Super easy and absolutely delicious!
INGREDIENTS (makes 4 waffles):
1/2c cauliflower rice or 1c cauliflower florets (my riced cauli is from Trader Joes)
1/2c almond flour
1 clove garlic
2 tablespoons jarred sundried tomatoes (optional, remove the oil)
1/2 teaspoon baking powder
1/4 teaspoon paprika
Blend all ingredients in high speed blended until smooth. Preheat your waffle iron and cook waffles on medium heat for 4-6 minutes.
