Refined Sugar-Free Paleo Banana Bread

Try saying that 10 times fast! We’ve been craving banana bread like CRAZY lately, so I took full advantage when I had two super ripe bananas the other day! Safe to say banana bread doesn’t last long in our house...we’re obsessed! 

Ingredients:

  • 2 ripe bananas, mashed

  • 2 large eggs (organic/pastured if possible)

  • 2 cups almond flour

  • 2 tablespoons coconut oil

  • 1/2 cup shredded coconut

  • 1/2 tablespoon cinnamon

  • 1 teaspoon apple cider vinegar 

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • *For extra sweetness, add 2 tablespoons maple syrup

Prep:
Preheat the oven to 350F. In a bowl, mash bananas with a fork until no large pieces remain. To the bananas, add eggs, coconut oil, vanilla and apple cider vinegar. Mix well. Add remaining ingredients to the bowl and mix until all ingredients are well-incorporated (be careful not to over-mix). Place in a parchment-lined loaf tin, and bake for 35-40 minutes. Do the "toothpick test" to ensure the bread is fully cooked!
